Leftovers!

Hi Seedlings! Megs here.  This is just a quickie post, and I MUST give a shout out to Danielle @ Blissful and Domestic and the Economides family for this idea.  Now, first I must make a confession...usually eating leftovers at our house is a dismal, depressing affair (and a last resort).  Someone usually ends up opting for a frozen dinner or peanut butter sandwich.  This was the first week of our new weekly menu plan, however, so we have had plenty of fantastic and healthy meals this week.  The Economides (and Danielle at Blissful and Domestic) both talk about using leftovers as a way to stretch your grocery budget while making it fun.  Instead of leaving leftovers stranded on "refrigerator island" until they go moldy, I decided to be proactive and institute our first full "Leftovers Night" onto the menu.


It was a fantastic success! I simply rounded up all the leftovers from the week's meals and laid everything out on the counter/stove and threw out some paper plates and said "go forth and eat."  Yes, obviously I plated the two-year old's food, but everyone else (including my sweet mother in law who is visiting this week) got their own dinners AND we cleaned out the refrigerator to boot! Sweet!!! I am SO making this a weekly thing!!!!  With older kiddos, it would be a fun and easy way to handle a casual movie night, too.

oh...and we are having the last of the banana blueberry bread for dessert.  WIN!

  1. My favorite leftover "re-meal" is talking meatloaf and mashing it down as stuffing in egg roll wraps, then frying them in a skillet. Simple easy and fun.

  2. Oh that sounds FANTASTIC!!! I also love your leftover soup (putting all the odds and ends from meat and veg and rice etc into a container in the freezer and when full making soup out of it). That soup (yours) was fantastic!!!

  3. Okay - a Blast from the Past . . . Grandma Amy used to make pancake batter and put in any leftovers of vegetables or cooked hamburger. She'd cook them up and we'd put a little butter on them and chow down. Sounds dreadful (I never did make that concoction for my own family) but at the time, it was tasty. Really! Okay #2 -- Grandma wasn't the best cook in the world but she sure could bake up bread that melted in your mouth!
